Your new favorite breakfast is here! This Breakfast Peach Crisp is so yummy you won’t believe it’s healthy enough for breakfast!

It’s finally warming up and I love having the windows open and the smell of fresh air coming through! I love this time of year and after the winter we’ve had, I’m enjoying spring even more this year.

I crave fruit crisps during warmer weather. I’ve had this Breakfast Peach Crisp on my mind ever since I created it for the Spring 4-Week Meal Plan. It’s fresh, light, and so delicious. You won’t believe it’s healthy. You can even enjoy it for dinner. Plus, it’s made from simple ingredients, low in sugar – it’s a yummy way to start {or end} the day. I have no doubt your kids will love it just as much as you!

Serve with Yogurt

It’s perfect on its own or I love serving it with plain almond milk yogurt. My go-to brand for dairy-free yogurt is Kite Hill. And whatever yogurt you decide to use, make sure you grab the plain, unsweetened kind because it will contain less sugar.

Perfect for Meal Prepping

You can easily whip this up the morning of. It’s also perfect for cooking ahead of time and reheating on a busy weekday morning.

Or you can always assemble everything, put it in the fridge overnight, and then it’s all ready to cook in the morning.

If you need to eat on the go, it tastes just as yummy cold. Add it to some yogurt in a container with a lid and enjoy it anywhere you go.

Breakfast Peach Crisp with Yogurt

Serves 4-6


Ingredients:

3 cups frozen peaches

1 cup oats

1/3 cup unsweetened coconut flakes

1/3 cup pecans, chopped

1/2 cup almond flour

5 tbsp coconut oil, melted

3 tbsp pure maple syrup

1 tsp vanilla

2 cups unsweetened almond milk yogurt

Directions:
1. Preheat the oven to 350.

2. Add the peaches to an 8x8 baking dish.

3. In a bowl mix together oats, coconut flakes, pecans, and almond flour until well combined. Then mix in the coconut oil, maple syrup, and vanilla.

4. Spread oat mixture evenly over the peaches.

5. Bake for 30-35 minutes or until fruit is bubbly and topping is golden brown.
