Oatmeal Cookie Dough Nice Cream

If you have been following me on social media {Facebook or Instagram} then you know that I love making nice cream. It's "ice cream" made out of yep, frozen bananas. So it's not actual ice cream but it sure is a yummy healthier version of it. 

I typically just keep it plain Jane and blend up a frozen banana and a dash of unsweetened almond milk and call it a day. But then my life was forever changed when I came across this recipe for Oatmeal Cookie Dough Nice Cream. Yep, frozen bananas, almond butter, oats, dates and a pinch of cinnamon? Now that will change your life.

And actually freezing the nice cream before eating it was a game changer. If you like soft serve ice cream go ahead and enjoy it right away. But if you can wait,  freezing it made it possible to put between two delicious cookies, rolled in mini chocolate chips....so it well worth the wait. I promise. 

Have I convinced you yet that eating healthy is truly delicious? Now, don't get me wrong, this is still a treat so I don't recommend eating the whole thing. Unless you want to of course, but it still has sugar...but better for you and no processed sugars!

Ingredients:

10 pitted dates

¼ cup maple syrup

6 frozen bananas

1/4 cup almond butter

1/3 cup quick oats

1 tsp cinnamon

1 tsp vanilla

Splash of almond milk

Directions:

Blend all ingredients in high-speed blender until smooth. Transfer to parchment-lined bowl or pan and freeze overnight or until firm. Bonus points: scoop nice cream between two oatmeal cookies and roll edges in mini chocolate chips.
