Burrito Bowl Night

If we are eating out, Chipotle is my go-to place for a quick, healthy meal. And I never miss out on getting their guacamole. #bestguacever

So when it occurred to me that I could easily make a burrito bowl at home...I was a bit overjoyed. And I have no idea how I am just now thinking of doing this. Hello, Kara. So easy. You will thank me later. Promise.

I used the best lime marinade {it acts as a dressing too!} for the chicken that brings so much flavor and zest. And then topped brown rice with only the.best.ingredients – black beans + corn + tomatoes + sauteed bell peppers & onions + avocado + cilantro.

Doesn’t this Burrito Bowl look Ah-Mazing?! It will change your life. Too dramatic? Okay, but it does make dinner a little more exciting than chicken and green beans.

This makes a weeknight dinner super easy. And if you have any picky eaters – no problem. Let them create their own bowl and add their fave toppings.

How to make the best Burrito Bowl:

First, marinade + cook the chicken.

Lime Marinade/Dressing:

Ingredients:

4 Chicken Breasts

3 tablespoons olive oil

1/2 cup freshly squeezed lime juice

2 tablespoons fresh chopped cilantro

2 cloves garlic, minced

1 teaspoon coconut sugar

1 teaspoon salt

Directions:

  1. Whisk together all ingredients. Pour half the marinade into a shallow dish to marinade the chicken breasts for two hours if time allows or all night/day. Refrigerate the reserved untouched marinade to use as a dressing.

  2. In a skillet over medium-high heat grill chicken fillets on each side until golden, crispy and cooked through. I added the juices from the marinade to add a little more flavor. Once chicken is cooked, set aside and allow to rest.

Second, cook brown rice according to package + sautee bell peppers & onions.

Third, top brown rice with your favorite toppings.

  • Black beans

  • Corn

  • Tomatoes

  • Salsa

  • Avocado

  • Sauteed bell peppers & onions

  • Lettuce

  • Guacamole

  • Cilantro

  • Lime dressing {from above}
