3 Breakfasts to Wow Dad on Father's Day
Father’s Day is such a special day and I can’t believe it’s already here! I love being able to show just how special and appreciated the fathers that are in my life. One way to make their day special is through food! Food is my love language and I love spreading cheer through simple + easy + delicious meals.
If you need some ideas for Father’s Day brunch, I’m sharing three simple + easy recipes that will be sure to brighten and kick his day off well!
Although these versions are gluten-free and healthier, he won’t even know. So shhhhh don’t tell him until AFTER and let him be surprised!
Chocolate Waffles
Waffles are my husband’s favorite breakfast food so I will more than likely be making this for him on Father’s Day. This recipe is only 5 ingredients and cook up light and airy inside and crispy on the outside. Get creative and add your favorite toppings like fresh berries, chocolate chips, or pure maple syrup.
Chocolate Waffles
1 ½ cup 1:1 gluten-free all-purpose flour
3 tbsp coconut sugar
2 tsp baking powder
1 ½ cup almond milk
3 tbsp applesauce
3 tbsp raw cacao powder
Directions:
Preheat waffle maker.
Mix all ingredients in a bowl until smooth and all lumps are gone.
Add waffle batter to the heated waffle maker and close the lid.
Cook for 3-4 minutes or until waffles are cooked through.
Repeat until the batter is gone.
Breakfast Peach Crisp With Yogurt
We love making healthier crisps for breakfast and this one is perfect for summertime and will make for a delicious Father’s Day brunch option! And it’s super easy and perfect for prepping ahead. You can make this the night before and then pop it in the oven the morning of. It’s perfect as is but extra yummy with some plain yogurt.
Breakfast Peach Crisp With Yogurt
3 cups frozen (or fresh) peaches
1 cup oats
1/3 cup unsweetened coconut flakes
1/3 cup pecans, chopped
1/2 cup almond flour
5 tbsp coconut oil, melted
3 tbsp pure maple syrup
1 tsp vanilla
2 cups unsweetened almond milk yogurt
Directions:
1. Preheat the oven to 350.
2. Add the peaches to an 8x8 baking dish.
3. In a bowl mix together oats, coconut flakes, pecans, and almond flour until well combined. Then mix in the coconut oil, maple syrup, and vanilla.
4. Spread oat mixture evenly over the peaches.
5. Bake for 30-35 minutes or until fruit is bubbly and topping is golden brown. Serve with almond milk yogurt on top.
Gluten-Free Chocolate French Toast
This should basically be considered a dessert but it’s Father’s Day and he deserves something extra! I guarantee that no one will complain when you serve the most delicious warm French Toast covered in fried banana slices and raspberries. And don’t forget the chocolate--which in my opinion is the best part. This is an easy and no-fuss recipe which is the only kind I share!
Ingredients:
8 slices of gluten-free bread
1 cup unsweetened almond milk
1 tbsp vanilla extract
3 eggs (or 3 flax eggs if egg-free)
1 tbsp coconut sugar
½ cup fresh raspberries
1 banana {sliced}
2 tbsp coconut oil
¼ cup mini chocolate chips {plus a few more for topping}
Optional: Pure maple syrup
Directions:
In a bowl, whisk together the almond milk, vanilla, eggs, and coconut sugar.
Pour mixture into a 9 x 13 baking dish and lay bread in the mixture.
Cover the pan and place in the fridge for 10 minutes.
While the bread is soaking, add 1 tbsp coconut oil to skillet. Once melted, add banana slices to the pan. Flip slices after a few minutes until a little brown and crisp on each side.
Once the 10 minutes is up, flip the bread so the other side is in the egg mixture. Place back in fridge and wait 10 minutes.
When ready to cook the french toast, add 1 tbsp to skillet. Once the skillet is hot, place french toast in the skillet, add some mini chocolate chips on top and when you flip add more to the other side. Chocolate chips will melt and you can spread the chocolate.
Cook each side for 3-4 minutes or until golden and crisp.
Serve immediately with fried banana slices, raspberries, chocolate chips and pure maple syrup.
