3 Festive 4th of July Recipes

It’s beginning to feel more like summer just in time to celebrate the 4th of July. Independence Day festivities might look a little different this year but that doesn’t mean you can’t enjoy some yummy, festive food however you choose to celebrate. 

Festive food makes every holiday celebration a little more fun. 4th of July brings out all the red, white, and blue and I’m excited to show you three simple, tasty, patriotic recipes.

Firework Fruit Kabobs 

I’m obsessed with fruit, especially berries and watermelon during the summer. These firework fruit kabobs are such a fun, easy way to add some fruit to your party! They’re not only adorable and easy to make but healthy too. It’s a win-win in my book. 

What you need:

Wooden skewers

Watermelon 

Blueberries

Star cookie cutter 

Directions: 

  1. Cut the watermelon in slices and use the star cookie cutter to create star shapes out of the watermelon.

  2. Add 7-10 blueberries to each skewer leaving room for the watermelon star at the top. And be sure to stick the pointed side in the watermelon star so it’s not exposed.

*To keep fruit from falling off, insert the stick in the center of each blueberry.

Red, White, & Blue Fruit Salsa

This yummy and refreshing summer salsa is perfect for any get together. It’s a fun twist on salsa packed with lots of nutrients from the strawberries, blueberries, and jicama. And the red, white, and blue make it perfect side dish or appetizer to bring to your 4th of July festivities 

Don’t be scared off by the jicama. It’s a root vegetable that’s high in antioxidants, good for heart health, promotes digestion, and packed with fiber. You can read why I love fiber here and how it helps you lose weight.

I love roasting jicama, so if you have any leftovers try roasting it in the oven! 

Ingredients: 

1 cup jicama, peeled and diced

1 cup blueberries

1 cup strawberries, diced

¼ cup cilantro, chopped

¼ cup purple onion, diced

1 lime, juiced 

Directions: 

Mix all ingredients together in a bowl until well combined. Enjoy with tortilla chips or on a salad.

Patriotic Brownie Bites 

Here’s a perfect dessert that’s festive and will take you no time at all to make. If you’re still wondering what to bring for dessert to your 4th of July party, this is it and I have no doubt they will be a crowd-pleaser. This recipe is also allergy-friendly and gluten-free, dairy-free, and can even be egg-free. I “cheated” and used a gluten-free brownie mix but made my own homemade dairy-free cream cheese frosting that’s so incredible. Add on some strawberries and blueberries and you’ve got yourself a festive little treat to share.

Ingredients: 

24 brownie bites (I used this mix)

1-pint blueberries

5-8 strawberries, sliced

½ cup Kitehill dairy-free cream cheese

1 cup So Delicious Coconut Whip 

Directions:

  1. Make the brownie bites according to box using mini muffin tins.

  2. For the frosting, use an electric mixer to mix the cream cheese and coconut whip together until light and fluffy.

  3. Add the frosting to a baggie and cut off the tip. 

  4. Then add the frosting to brownies and top with strawberry slices and blueberries.
