5 Healthy + Simple Back to School Snacks

It’s somehow August already and I can’t believe school is starting soon! Our world looks so different right now and school is going to look different for everyone. Some are virtual, some are in person, some a mix, and some (like me!) are tackling homeschooling this year. It will be a journey this year!

One thing I do know that won’t change is my kid’s asking for snacks a thousand times a day! Please tell me it’s not just my kids. Whether they need an after school snack or a break from studies in the morning, I’ve got some fun + healthy snacks so you’re ready for when hunger strikes. However and wherever you’re snacking you can snack happy this year.

Hummus Snack Board

Nothing is easier than throwing some veggies + crackers on a board with hummus or your favorite dip and calling it a snack! This always encourages my girls to eat more veggies too (bonus!) and they think it’s a fun snack. Use your favorite veggies + crackers + pretzels…the possibilities are endless. We love celery, mini bell peppers, carrots chips, and hummus.

Mini Pizzas 

You can never go wrong with mini pizzas for a snack And these 3-ingredient pizzas are easy to make and a crowd-pleaser. All you need are Canyon Bakehouse’s English Muffins, shredded cheese of choice (we used a dairy-free cheese), and marinara sauce. Takes less than 8 minutes and you’ve got yourself a filling, whole grain snack. 

Canyon Bakehouse is my favorite, go-to brand for gluten-free breads. And their English muffins are sealed air-tight at the bakery and stay fresh for 90 days unless you open them and break the seal…then you can chow down within five days like any bread. They are perfect for stocking up to have on hand for snacks and breakfasts during hectic back to school time! Also, they are free from top allergens like gluten, tree nuts, peanuts, and dairy.

Makes 4 mini pizzas

2 Canyon Bakehouse English Muffins 

1/4-1/2 cup Marinara sauce 

1/2 shredded cheese

Cut the English muffins in half. Then top each muffin with sauce + cheese. Bake in a toaster oven for 5-6 minutes or until cheese is melted.

Chocolate Coconut Energy Bites

These are a staple in our home and I recommend making a double batch because they never last long. They are easy to pack, bring on the go, or grab right out of the fridge. 

Makes 12-14 bites 

 1 cup gluten-free oats

3/4 cup peanut butter

1/4 cup flaxseed meal

1/4 cup mini chocolate chips

1/3 honey

2 tbsp chia seeds

1/4 cup coconut flakes, unsweetened

2 tbsp cocoa powder 

 Mix all ingredients together in a food processor or bowl until well combined. Use a cookie scoop to scoop into balls. Store in the fridge or freezer.

Chocolate Fudge Dip

This is such a fun snack + who doesn’t love a good dessert dip? All you need are three simple ingredients too: dates, coconut milk, and cocoa powder and you got a decadent snack. We love love dipping pretzels, strawberries, and apple slices. 

1/2 cup cocoa powder

1 cup coconut milk (canned)

3/4 cup dates, pitted 

Add all ingredients to a blender and blend until smooth. Add to fridge to thicken up a bit and then enjoy!

Grab + Go Snacks

I shared some really simple snacks but sometimes you might need something as you run out the door so I wanted to include two of our fave grab + go snacks because life happens! 

Bada Bean Bada Boom 

If you want something salty + crunchy we love grabbing these plant-based bean snacks. Each pack has 6-7grams of protein and they have so many yummy flavors. Perfect to store in your purse or car for when hunger strikes. 

Made In Nature

We love these wholesome snacks, made with few ingredients, but so much flavor. They are great for on the go, in the car, at the park, or just when you need something quick at home. We devour the dried mangoes and coconut chips!
