Healthier Easter Celebration Recipes
I love Easter. In addition to the celebration, I love snapping pictures of the girls in their pretty dresses and Shep in his handsome little outfit. But what comes to mind when you think of Easter food? Personally, I think of breakfast, chocolate, and things shaped like an egg.
Today, I’m going to help you kickstart your morning with a delicious breakfast to get your Easter started right. Then, you can follow up with some yummy carrot-cake muffins and peanut butter eggs.
Roasted Chickpea Avocado Toast
Make brunch easy with this roasted chickpea avocado toast. You can easily whip up a delicious brunch in no time. You’ll be getting lots of fiber and protein from the chickpeas and healthy fats from the avocado for a well-balanced breakfast.
Ingredients:
6 slices sourdough bread (or your favorite bread)
2 avocados, mashed
1 bunch, radishes, sliced
1 tsp paprika
½ tsp garlic powder
1 can chickpeas, rinsed and drained
1 tbsp pure maple syrup
1 tbsp water
1 tbsp nutritional yeast
Handful radish sprouts, optional
Directions:
1. Preheat the oven to 375.
2. Mix the paprika, garlic powder, chickpeas, maple syrup, water, and nutritional yeast together in a bowl until well combined. Spread evenly on a baking sheet.
3. Bake for 35-40 minutes or until crispy.
4. Toast bread and spread mashed avocado on toast.
5. Top with radishes, roasted chickpeas, and radish sprouts, if using.
Carrot Cake Muffins with Dairy-Free Cream Cheese Frosting
These Carrot Cake Muffins are so moist, perfectly spiced, and only sweetened with bananas. Yup. No added sugar! This recipe is so simple and you’re going to love the dairy-free cream cheese frosting.
Makes 6-8 muffins
Ingredients:
2 bananas, mashed
1 1/4 cup almond flour
2 tbsp almond butter
1 tsp baking soda
1/4 cup carrots, shredded
1/4 cup walnuts, chopped
1/4 tsp nutmeg
1/4 tsp cinnamon
1/4 cup Kite Hill Plain Almond Milk Cream Cheese
1/2 cup So Delicious Coconut Whip
Directions:
1. Preheat oven to 350 degrees. Add muffin liners to the muffin pan.
2. Mash bananas in a bowl.
3. Add the rest of the ingredients (minus the cream cheese and coconut whip) and mix well.
4. Add batter to muffin liners and bake for 18-20 minutes or until cooked through.
5. While the muffins bake, make the cream cheese frosting by blending the cream cheese and coconut whip with a hand mixer. Blend until well combined.
6. Once muffins are cooled, add cream cheese frosting and enjoy.
Healthy Peanut Butter Eggs
You are going to want to make these ASAP! These peanut butter eggs only require 4 simple ingredients. Plus, they are sweetened with a little bit of pure maple syrup making them a guilt-free treat.
Ingredients:
2/3 cup peanut butter
2 tbsp coconut flour
1 tbsp maple syrup
1 cup dairy-free chocolate chips
Directions:
1. Add parchment paper to baking sheet.
2. Mix peanut butter, maple syrup, and coconut flour in a bowl. If still runny add another little bit of coconut flour.
3. Using your hands mold the peanut butter mixture into an egg shape.
4. Place each peanut butter egg on the prepared baking sheet.
5. Once the peanut butter eggs are formed, place the baking sheet in the freezer for 20-30 minutes.
6. When the peanut butter eggs are ready, melt chocolate on low in a small saucepan or in the microwave.
7. Once melted, add each peanut butter egg to the chocolate and cover. Drizzle chocolate over each egg, optional.
8. Place back in the freezer for 1 hour.
9. Keep stored in the freezer or fridge.
