This Pumpkin Pie French Toast Bake is made with simple, wholesome ingredients. You don’t have to say goodbye to yummy food when you’re wanting to eat healthier or eat gluten-free. I love showing that eating healthy really is simple, easy, and delicious.
Now I won’t say this recipe is healthy but it is healthier than what you’re probably used to! And that’s the goal, right? Tweaking things to make them healthier and still living a balanced healthy lifestyle. Lowering the amount of sugar and using better ingredients is just a simple way to make something healthier and better for you.

What Ingredients do You Need to Make This Pumpkin French Toast Bake?

Pumpkin, canned
Unsweetened almond milk
Eggs
Pumpkin pie spice
Canyon Bakehouse’s Hawaiian Sweet Bread
Butter
Ground cinnamon
Coconut sugar
Almond flour
Pecans, optional
Can I Make This Pumpkin French Toast Bake Ahead of Time?
Yes! Make the bread mixture in the 9 x 13 baking dish, cover, and place in the fridge. Next, make the streusel topping but instead of topping the bread mixture with the streusel topping, add it to a container and place it in the fridge. Then when you’re ready to bake sprinkle it on the bread mixture.

This french toast is perfect for brunch on the weekend with your family. You can make it ahead of time and reheat or prep and bake the morning of. It’s a crowd-pleaser and tastes a bit like dessert. Make some scrambled eggs and bacon and you have the perfect brunch.

Pumpkin Pie French Toast Bake
1 cup canned pumpkin
1 cup unsweetened almond milk
4 eggs
2 teaspoons pumpkin pie spice
1 loaf of Canyon Bakehouse’s Hawaiian Sweet Bread
1/4 cup cold butter, cubed
1 teaspoon ground cinnamon
1/4 cup coconut sugar
1/4 cup almond flour
1/4 cup chopped pecans, optional
INSTRUCTIONS
Preheat oven to 350 degrees. Grease a 9 x 13 baking dish.
Cut bread into 1-inch cubes and set aside.
In a large bowl, whisk together canned pumpkin, almond milk, eggs, and pumpkin pie spice.
Add bread cubes to the pumpkin mixture and gently stir until bread is coated.
Pour bread and pumpkin mixture into a 9 x 13 pan and spread evenly.
In a small bowl, mix cold butter, coconut sugar, almond flour and cinnamon using a fork or your fingers until it resembles coarse crumbles. Sprinkle over bread mixture.
Bake for 35-45 minutes or until browned and french toast is set.
Once done baking you can add the pecans (optional).
