It’s the most wonderful time of the year! TBH I don’t love winter or the cold but I do love the Christmas season. Everyone is so cheery and our home is cozy with the twinkling lights on the tree. We’ve actually had our tree up since the middle of November. This is the earliest we have ever put our tree up but it brings so much joy that we decided to put it up earlier this year. I’m so curious, when do you put your Christmas tree up?
Christmas came a bit early this year when I created these Chocolate Chip Peppermint Cookies for a project I was working on for a company back in October. They were so good, I immediately made another batch. I LOVE peppermint and if you throw in chocolate it’s like the perfect combination. I fully enjoy all things peppermint during this time of year.
These cookies are gluten-free, sweetened with coconut sugar, and I switched things up and used 1:1 gluten-free baking flour making them taste just like the real thing. You will definitely have a hard time eating just one.
These would make the perfect addition to your holiday parties or Christmas Eve get together. I plan on making a batch for Christmas Eve with my side of the family! We always get together for food and a fun gift exchange after the Christmas Eve service at our church. It's a fun tradition I look forward to every year.

Chocolate Chip Peppermint Cookies
Makes 15-18 cookies
Ingredients:
1 cup & 2 tbsp 1:1 gluten-free flour
½ tsp baking soda
½ tsp salt
1 stick (½ cup) butter, unsalted, softened
¾ cup coconut sugar
1 egg
½ cup chocolate chips
4 candy canes, crushed
Directions:
Preheat oven to 350 degrees.
In a small bowl, mix flour, baking soda, and salt.
In a large bowl, beat the butter and coconut sugar with a hand mixer until creamy.
Add the egg and beat until well combined.
Gradually add the flour mixture and beat until well blended.
Stir in chocolate chips and candy cane pieces.
Use a cookie scoop and add dough to a baking sheet. Bake for 8-10 minutes or until golden brown.
