Gluten-Free Apple Crisp

Although I am a summer gal myself, I do love fall. There is something so magical about the leaves changing colors and wearing a cozy sweater outside. I also love apple crisp but somehow I have never created my own gluten-free one. Until now! 

I used the base of the recipe for my Gluten-Free Blueberry Crisp but changed it up a bit by using Seven Sundays Blueberry Chia Buckwheat Muesli. Side note: my family is now obsessed with their cereal. I love that they use simple ingredients, no refined sugars, and it tastes amazing. Immediately, I knew after my first bite that I needed to use it for my next recipe. 

This apple crisp has the perfect sweet, crisp topping with soft, cinnamon apples. The perfect dessert or breakfast {don't you love when it dessert can act as a breakfast too?!}. The warm apple smell that will fill your house is worth making this recipe. 

Most apple crisp recipes have so much added sugars so I am happy to say that this one is refined sugar-free – sweetened with only pure maple syrup. 

As with any recipe, feel free to customize it to your liking. If you love cinnamon, add some more! I didn't peel the skin off the apples {because I was too lazy} but feel free to do that if you don't like the skin. 

You can even prepare this ahead of time and store in the fridge for a day or two. Then pop in the oven when you are ready!

Ingredients: 

6-8 apples cored, sliced {and peeled if that's what you prefer}

1 1/2 cup Seven Sundays Blueberry Chia Buckwheat Muesli (or regular gluten-free oats)*

1/2 cup almond meal

1/4 cup pure maple syrup {or honey}

1/4 cup coconut oil {melted}{or olive oil}

1/2 tsp sea salt

2 tsp cinnamon 

*If I’m just using gluten free oats I like to add 1/2 cup of chopped nuts and 1/4 cup chia seeds!

Directions: 

1. Preheat oven to 350.

2. In a bowl mix apple slices and cinnamon together then add to a 9x13 baking dish.

3. Mix the rest of ingredients well and spread onto the apples. 

4. Bake for 35-40 minutes or until fruit is bubbling and topping is golden brown. 

This would be PERFECT with homemade coconut whip cream or a scoop of Coconut Bliss ice cream
