Gooey Brownies {for two}

I really should hold on to this recipe for Valentine’s Day but that would be cruel because these brownies are so good. It’s so good you’ll love me and hate me after you try them. I’ve given you fair warning. These brownies are gooey, chocolatey, and just absolutely perfect.

These gooey brownies are so incredibly easy to make. Perfect for a date night in, Friday night dessert, or a just because treat. Just a handful of ingredients and 12 minutes is all you need. I love when a dessert is so decadent AND so easy to make. The secret ingredient is one of my favorite dark chocolate bars everrrr: JoJo’s Dark Chocolate Bark. The pros and cons of these gooey brownies. Con: It only serves two. Unless, of course,  you’re keeping it from your kids then this is a pro for sure. Pro: It only serves two. So no lingering leftovers tempting you the next day.

It’s the only brownie recipe you’ll need and you can feel good about. Sweetened only with a bit of coconut sugar you won’t even know they’re a healthier take on brownies. And the melted chocolate reminds me of molten lava cakes...OK, that’s enough for now...let’s make some gooey brownies, shall we?!

Gooey Brownies {for two}

Ingredients:

1 cup almond flour

½ tsp baking powder

¼ tsp baking soda

¼ cup coconut sugar

4 tbsp cocoa powder

3 tbsp coconut oil, melted

½ tsp vanilla

1 egg

1 JoJo’s Chocolate Bark, chopped

Directions:

1. Preheat the oven to 350 degrees.

2. In a medium bowl mix almond flour, baking powder, baking soda, coconut sugar, cocoa powder together until well combined.

3. In a separate bowl, mix vanilla, coconut oil, egg together and then add to dry ingredients.

4. Pour the bowl of wet ingredients into the bowl of dry ingredients and stir just until a smooth, chocolatey batter has formed. It helps to use your hands at this point.

5. Fold in chocolate bark pieces.

6. Divide dough between 2 8 oz ramekins.

7. Bake the brownies in the preheated 350 degree oven for 8 minutes. Let cool slightly before enjoying.
