Healthy Peanut Butter Chocolate Chunk Cookies
These cookies are a dream. One bowl and a handful of goodness are all you need. These are the perfect cookies to whip up when in a pinch because it only required 15 minutes from start to finish. How is that for an easy recipe?!
The girls love treats after school, so I decided to create a peanut butter cookie that didn't have a lot of sugar in it. And of course, I had to add some chocolate chunks because chocolate and peanut butter are the perfect combo, IMO.
But consider this your warning: It is hard to stop after two...and I may have snuck one or two more throughout the day!
Ingredients:
1 cup almond flour
1 cup natural peanut butter {no added sugar}
3 tbsp coconut sugar
1 egg
1/4 tsp baking soda
2 tbsp almond milk
half of dark chocolate bar {cut in chunks}
Directions:
1. Add parchment paper to cookie sheet.
2. Add all ingredients {except chocolate} in a bowl and mix well.
3. Add chocolate chunks to the dough.
4. Roll dough into small balls and place on cookie sheet.
5. Press down on balls to flatten slightly.
6. Bake at 350 for 9-10 minutes
