Paleo Chocolate Chip Cookies
It's no secret that I love sweets, I know I post about salads and allll the healthy eats on Instagram but I also LOVE me some yummy treats. It's all about balance after all, right? I absolutely love creating healthy treats and finding the healthier versions for my family to enjoy.
These Paleo Chocolate Chip Cookies are one of my family's favorite treats. And one that I feel good about making and eating. With no refined sugars or processed flours, they are basically calories that don't count. Okay, I guess it doesn't work that way. But they are way better for you than the average cookie. So go ahead a enjoy them guilt free.
These cookies are best right out of the oven...I dare you to only eat one! And if we have any left I love to freeze them to eat in case of a chocolate emergency.

Ingredients:
3 cups almond meal
1 cup dark chocolate chips (I use Enjoy Life brand)
1 cup chopped walnuts (or almonds)
½ tsp baking soda
¼ tsp salt
⅓ cup honey
2 TBS melted coconut oil
½ tsp vanilla extract
1 egg
Directions:
Preheat oven to 350. Add dry ingredients together. Whisk wet ingredients. Mix together. Bake 10-13 minutes. Best when warm. I stick the rest in the freezer.
