Black Bean Burgers

I used to make these all the time when we lived in Nashville but sort of forgot about them after the move! Do you ever do that? Completely forget about a recipe? Or is that just me? 

I am slowly working black beans back into my diet. They were giving me all sorts of issues but I am trying them out again in hopes my body will like them again! I originally made these for the girls but found that I was eating them because they were so good. Iylee wasn't a fan though...she has become my picky eater. Lo on the other hand shares my love for them. I decided to add a whole bunch of spinach so I could sneak in some extra veggies and London had no idea!

Ingredients:

2 cans black beans

1 cup finely crushed tortilla chips {I used blue corn chips}

1-2 cups spinach, finely chopped

1/2 cup salsa, plus extra for serving

1 large egg, lightly beaten

1 scallion, finely chopped

1/4 tsp sea salt

1/4 tsp black pepper

Directions: 

  1. Use a food processor or potato masher to smash the beans in a larger bowl until you have a chunky mixture with a few semi whole beans left. Stir in the tortilla chips, spinach, salsa, egg, scallion, salt and pepper. Set the mixture aside for 10 minutes to allow the chips to absorb some of the liquid, then shape into patties.
  2. Place the patties on a plate, cover with plastic wrap and refrigerate for at least 30 minutes or overnight.
  3. You can cook them one of two ways. You can bake them at 350 for 12-16 minutes or you can heat some coconut oil in a skillet and cook each side for 5-6 minutes or until golden brown. Top with salsa and enjoy!
