Sweet Potato Toast:

I can't get over how yummy sweet potato toast is. This really shouldn't be a surprise since I'm obsessed with all things sweet potatoes!

I used to make these all the time when we lived in Nashville but sort of forgot about them after the move! Do you ever do that? Completely forget about a recipe? Or is that just me?
