Lemon Blueberry Chia Muffins
These lemon blueberry chia muffins are a guilt-free treat packed with antioxidant-rich blueberries, omega-3-loaded chia seeds, and zesty flavor. Perfect for sharing at the office or enjoying at home!
Ingredients (Makes 12 muffins):
1 3/4 cups whole wheat flour or gluten-free flour blend
1/4 cup chia seeds
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup unsweetened applesauce
1/3 cup maple syrup or agave nectar
Zest of 1 large lemon
Juice of 1 large lemon (about 1/4 cup)
1/3 cup unsweetened almond milk or other plant-based milk
1 teaspoon pure vanilla extract
1 cup fresh or frozen blueberries
Instructions:
Preheat and Prep: Preheat your oven to 350°F (175°C) and line a muffin tin with 12 liners or lightly grease the cups.
Combine Dry Ingredients: In a large bowl, whisk together the flour, chia seeds, baking powder, baking soda, and salt.
Mix Wet Ingredients: In a separate bowl, mix the applesauce, maple syrup, lemon zest, lemon juice, almond milk, and vanilla extract until well combined.
Combine Wet and Dry: Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Be careful not to overmix.
Fold in Blueberries: Gently fold in the blueberries, ensuring theyâre evenly distributed throughout the batter.
Fill the Muffin Tin: Divide the batter evenly among the 12 muffin cups, filling each about 3/4 full.
Bake: Bake for 18â22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
