And yes, we're coming out of state fair season. We both know what that means: fried food and anything you can put on a stick.  

But how about a snack that's delicious and nutritious?

Roasted chickpeas! Just pour a can of chickpeas on a baking sheet and roast them at 400 degrees for 30 minutes.

Healthier Homemade Funnel Cake Recipe

Ingredients:

  • 1 1/2 cups whole wheat flour

  • 1 tablespoon baking powder

  • 1/4 teaspoon salt

  • 1 tablespoon ground flaxseed + 2.5 tablespoons water (flax egg)

  • 3/4 cup unsweetened almond milk

  • 1/4 cup maple syrup

  • 1/4 cup unsweetened applesauce

  • 1 teaspoon vanilla extract


Instructions:

Prepare the Flax Egg: In a small bowl, mix the ground flaxseed with water and let it sit for about 5 minutes to thicken. This will serve as your egg substitute.


Mix the Dry Ingredients: In a large bowl, whisk together the flour, baking powder, and salt until well combined.


Combine the Wet Ingredients: In a separate bowl, mix together the almond milk, maple syrup (or date syrup), applesauce, vanilla extract, and the prepared flax egg.


Make the Batter: Slowly pour the wet ingredients into the dry ingredients, stirring until just combined. The batter should be smooth but not overmixed.

Baking Option:

  • Preheat your oven to 375Β°F (190Β°C).

  • Line a baking sheet with parchment paper.

  • Transfer the batter to a piping bag or a plastic bag with the corner snipped off.

  • Pipe the batter onto the baking sheet in circular patterns to form the funnel cakes.

  • Bake for 10-12 minutes, or until the funnel cakes are golden and slightly crisp.

Serve:

  • Allow the funnel cakes to cool slightly before serving.

  • Sprinkle with a little cinnamon and/or drizzle a bit of additional maple syrup for extra sweetness.
