This french toast bake is so easy to make and the perfect breakfast to throw together last minute or you can plan ahead and let it sit overnight. I love simple, delicious breakfast options that taste like dessert and require little prep work. Although this recipe calls for simple flavors, they really come alive in this french toast bake. The coconut milk really adds so much flavor so be sure to get canned coconut milk, you can find it easily anywhere.
When I made this the first time, my husband and girls couldn’t stop eating it. Okay, I couldn’t stop either. It’s so moist and just sort of melts in your mouth. You could add a little drizzle of pure maple syrup on top before serving but I think it’s sweet enough as is.

Strawberries & Cream French Toast Bake
Ingredients:
1 loaf gluten-free bread, cut in 1-inch cubes
3 flax eggs (1 tbsp flax meal + 3 tbsp water per egg)
1 can coconut milk
1/4 cup pure maple syrup
1 tsp cinnamon
2 cups strawberries, sliced (frozen works great)
coconut oil
Directions:
1. Preheat oven to 350.
2. Lightly grease a 9 x 13 baking dish with coconut oil.
3. In a bowl. whisk together the flax eggs, coconut milk. maple syrup, and cinnamon until well combined.
4. Spread bread cubes evenly in the baking dish.
5. Add the strawberry slices.
6. Pour the mixture evenly over the bread cubes and strawberries.
7. Bake for 40-50 minutes.
