No-Bake Chocolate Coconut Bars
After a week of sick babes + the fact that I made it to FRIDAY, I’m celebrating with these No-Bake Chocolate Coconut Bars. They are dense, chocolatey, and basically the perfect anytime snack or treat. I added some protein powder to make them my post workout snack but I’ve also enjoyed them for dessert.
These bars are the combination of all my favorite things...chocolate, coconut, and peanut butter. Plus, they are gluten-free, dairy-free, and refined sugar-free and no baking required! So let’s just go ahead and eat the whole pan right now, okay? Just kidding. I don’t recommend that but I definitely wouldn’t judge you if you did!
I love that these bars are made with simple ingredients that you more than likely have on hand. And they are super easy to make...the hardest part is waiting for the chocolate topping to harden so you can enjoy them without making a mess.
They’ve been stored in my fridge all week and I’ve been consistently going back for seconds. Will someone come eat them for me?! :)
If you don’t happen to have all the ingredients here are some substitution ideas:
Almond Flour: If you don’t have almond flour add ¼ cup oats.
Honey: Can use maple syrup if you don’t have honey.
Peanut butter: Any nut butter will do!
Chocolate Chips: Melt a chocolate bar instead.
No-Bake Chocolate Coconut Bars
Coconut Oatmeal Bars:
1 cup gluten-free oats
1 cup unsweetened coconut flakes
¼ cup almond flour
2 scoops Aloha Chocolate Protein Powder {or 1 serving of your favorite protein}
¼ cup honey
1 cup Justin's Peanut Butter
¼ tsp salt
1 tsp vanilla
Chocolate Topping:
½ cup Enjoy Life Chocolate Chips
Directions:
1. In a large bowl, mix together oats, coconut flakes, almond flour and protein powder, salt, and vanilla.
2. In a microwave-safe bowl or on the stove top, combine honey and peanut butter. Melt the honey and peanut butter until smooth.
3. Add the honey and peanut butter to dry ingredients and mix well.
4. Spread into an 8 x 8 dish and set aside.
5. For the topping, melt the chocolate chips and spread or drizzle over the bars. Place the bars in the fridge until the chocolate has hardened.
6. Cut and serve at room temperature or cold. Keep in the fridge in an airtight container.
