Banana Chocolate Chip Mug Cake

I can’t even contain my excitement about this Banana Chocolate Chip MUG CAKE! It’s fluffy and filling with just the right amount of chocolate. It’s the perfect healthy treat when you’re craving something sweet. And I’m not sure there is anything better than a single serve cake you can whip up in less than 3 minutes! I didn’t think so.

Noah and I have been obsessed with the show Suits the past few weeks! I don't know how we didn't hear about it sooner, but we are forever grateful to our friends for telling us about it. Have you seen it?  Meghan Markle {soon to be married to Prince Harry} is in it and now I'm obsessed with all things royal.

I tend to reach for something sweet in the evening when we watch our newest favorite show and instead of grabbing something that’s high in sugar I decided to see what all the fuss was about with mug cakes. And oh.my.word. I’m never going back. I’m going two weeks strong with this deliciousness. My sister now makes one each night too. So be warned, you will become addicted to it.

But the good news: it’s packed with protein, it's sugar-free {besides a few chocolate chips}, and absolutely satisfies those cravings for something sweet. And it’s mostly Paleo {darn chocolate}. Okay, enough of me rambling on about how amazing it is. RUN to the store and grab these simple ingredients to make it right now...or tonight if you can wait that long.

Banana Chocolate Chip Mug Cake

Ingredients:

 2 eggs

3 tbsp unsweetened almond milk

Splash of vanilla

1 tbsp unsweetened coconut flakes {finely shredded}

1 tbsp mini chocolate chips

1/3 cup Birchbenders Paleo Banana Pancake mix {regular paleo will work fine too}

 Directions:

1. Grease a glass mug or glass bowl with coconut oil.

2. Whisk eggs, milk, vanilla, coconut flakes together. Add Birchbenders mix and chocolate chips. Mix until well combined.

3. Heat in microwave for 1 minute. Let rest for a second and then heat for another 30 seconds. Repeat until center is cooked through. Enjoy warm
